Yesterday one of my recent favorite food photos was the featured image on the main page of www.foodporndaily.com and I consider it an honor and a privilege.

With all the "healthy" oils on today's market we have many options to choose from when making a trip to the store. Canola, Avocado, Sunflower, Olive, Peanut and Flaxseed are all great choices for your kitchen. But what you may not already know about is the everyday versatility of coconut products and coconut oil.
As an edible oil it is extracted from the kernel or meat of matured coconuts harvested from the coconut palm which is found throughout the tropical regions of the world. Although it is wise to avoid the hydrogenated version of this oil (and all other hydrogenated oils for that matter!). While you can absolutely cook with coconut oil, its benefits can be best experienced in its raw, food grade, expeller pressed and virgin forms when it is overflowing with vitamins and nutrients.

Some of the most recent research with coconut oil has come from people suffering from Alzheimer’s disease. Reports of people now showing improving or even reversing the effects of Alzheimer’s by using coconut oil. We also now see a lot of reports of coconut oil health benefits from those suffering from hypothryroidism, as coconut oil helps boost metabolism and raise body temperatures to promote thyroid health.
I like to spread coconut oil over my cereal or oatmeal and in smoothies to get my daily dose, which for the average person is 3-4 tbs.
Beyond the kitchen, Coconut oil can be used as a multifaceted body product and moisturizer for everything from Eye Cream to Eczema. It can even be used as a natural deodorant, natural sunscreen and healing agent for cuts and scrapes under the band-aid. When applied on scrapes and cuts, coconut oil forms a thin, chemical layer which protects the wound from outside dust, bacteria and virus. Coconut oil works its magic and speeds up the healing process of bruises by repairing damaged tissues.

I discovered one of my favorite beverage companies Prometheus Springs at a local Whole Foods in Manhattan.
This capsaicin infused and truely invigorating drink both soothes and enlivens the body, but also makes a fantastic mix for cocktails! :) Its the holidays again and we've all had the fruit punch, so this year lets mix it up with a little HEAT! I'm a tequila and Rum kinda gal, but there are plenty of drink recipes available on the Prometheus website above. Here's one I'll be sampling this season for my citrus and mango fix:
Capsaicin Spiced Mango
2 oz Rum
3 oz Mango Chili Prometheus Springs
2 tbs fresh organic mango puree
1/2 oz Fresh squeezed organic lemon juice
1/2 oz Organic cane juice simple syrup
To garnish, float a paper thin slice of green chili in the center of the glass. For a little kick, rub the freshly cut end of a green chili pepper around the rim to give a hint of the chili’s juices when the glass touches your mouth. This creates an invigorating little burn on your lips while drinking this cocktail.

I like my foods spicy. I'm not talking only about peppers and heat, I like flavorful foods enhanced with a variety of herbs and spices. Indian food in particular ranks on the top of my list for always packing a punch direct from the spice market.
